生煎包的做法
1、和面
把准备好的低粉、酵母、泡打粉、牛奶和成团，然后盖上保鲜膜醒发20～30分钟。
2、准备肉馅
调肉馅。200克肉馅儿加入黄酒2克、生抽2克、老抽4克、盐3克、白砂糖4克、白胡椒粉适量、少许马蹄碎（没有也可以）、葱姜水60克搅打上劲（必须要加）。
注意，葱姜水要分次少量的加入，每次搅打至肉馅把水分完全吸收后再次加入。
调好的肉馅入冰箱冷藏30分钟备用。
把事先做好的肉皮冻切成小粒，和调好的肉馅儿拌在一起备用。
3、面醒发好了就开始包小包子
以上面团可以包20个小包子，每个包子的面皮大约16克，是一口一个很袖珍的那种。
都包好后略微再醒发一会儿就可以煎制了。
4、平底不粘锅放油，然后把包好的包子均匀地码放入锅。
大火煎至包子底部上色定形后，加入清水至包子的1/2处，盖好盖子中火煎2分钟。开锅盖撒芝麻后盖盖小火2分钟，再次打开盖撒小葱碎后继续盖盖煎1～2分钟，这时听到锅里发出噼里啪啦声响后（水基本上已干），关火焖2分钟左右就可以吃啦！
小贴士
生煎包是半发面，所以醒发20分钟左右就可以了，冬天如果室内温度不高可以适当的延长时间，但是不能像蒸包子那样全发出来。
葱姜水就是把小香葱，姜切碎末泡清水即可。
